Tomato Chutney

Ingredients

  • 2kg chopped tomatoes

  • 575g or 5 onions diced

  • 6 garlic cloves minced

  • 3 tsp ginger puree

  • 330g Light Brown sugar

  • 175ml Pomegranate Balsamic

  • 2 tsp Smoked sweet Paprika

Notes

After boiling, the chutney may seem thin - it will thicken as it cools!

Inspired by the BBC Good food chutney - but with some tweaks and substitutions :) If you prefer a chutney that isn't as sweet, I would suggest starting with a touch less sugar, and altering to taste.

Method

  1. Tip all the ingredients into a large pan and bring to a simmer, stirring frequently.

  2. Simmer for 1.5h, then bring to a boil for 30 minutes to allow it to thicken and become more jammy.

Sweet and sticky - I will be making this again! Amazing on hot dogs!
