Spiced Plum Syrup & Compote

Ingredients

Unfortunately this is a vague one as I was winging it as I made this!

I will be making this recipe a few more times to perfect it - so expect this to change!

  • Approx 2kg plums

  • Approx 1kg White Sugar (to taste)

  • Approx 250g Brown Sugar (to taste)

  • 0.5 - 1 tbsp ground Sweet Cinnamon

  • Approx 1 - 2 tbsp Lemon Juice

Notes

The spiced plum syrup works beautifully with lemonade and mocktails/cocktails; both the compote and syrup are amazing with pancakes, waffles, cake or even ice cream!

Method

  1. Cut the plums in half and remove the stones/pits then roughly chop the plums.

  2. Put the plums into a wide-based saucepan and pour the white sugar and sweet cinnamon across the top of the plums. You may want more or less sugar, depending on how sweet you want the compote. Mix and add lemon juice, then cook on a medium heat for approximately 30 mins (stirring occasionally).

  3. Once the plums are cooked down and soft, strain off the liquid, setting it aside. This is the basis of the syrup.

  4. Add the plums to a blender and blend until your desired consistency - your compote is done!

  5. Add the liquid back to the saucepan and add brown sugar (to taste), heat for another 20-30 minutes on low-medium.

  6. Restrain the liquid (now syrup) into another bottle/tub - You're done!
