Pastina

Ingredients
4 cups chicken stock
1 cup pastina or stelline
Shredded cooked chicken (measure with your heart)
50g butter
Garlic (also measure with your heart)
1/2 cup grated cheese (for inclusion, more is needed for garnish)
Salt
Olive Oil
Personal Note
I absolutely love this when I'm not feeling great - it's a simple form of a dish known as Italian penicillin soup
Method
Bring the chicken stock to the boil, then add the pastina, garlic, butter and cooked chicken
Stir continuously until the pasta is plump and has absorbed 80% of the liquid
Take the pasta off of the heat and instantly stir in the grated cheese and a pinch of salt
Finish off with an extra sprinkle of cheese and a drizzle of olive oil
