Basic Banana Bread
Rating: ⭐⭐⭐⭐⭐
Ingredients
140g soft butter
140g caster sugar
2 large eggs (room temperature)
140g self-raising flour
1tsp baking powder
2 ripe mashed bananas
50g icing sugar
Personal Note
This has been a personal favourite for years, its a fantastic recipe that I couldn't recommend more.
Notes
I love to jazz this recipe up by adding chocolate chips or even some dried fruit (personally, I'm a fan of sultanas soaked in tea - similar to a tea loaf).
My most recent batch was my Chocolate chip banana bread!
Making the icing with some lemon juice then garnishing with zest can give this a fantastic zing!
Method
Preheat oven to 180°
Butter a 2lb loaf tin and line with baking parchment
Cream the butter and sugar until light and fluffy, then slowly add the eggs with a little flour.
Fold in the remaining flour, baking powder, bananas and extras (if adding any).
Pour the mixture into the tin & bake for 30 minutes or until a skewer comes out clean - this recipe has certainly taken 45mins for me in the past, so it's important to keep an eye on it.
Let the banana break cool in the tin for 10 minutes
Mix the icing sugar with 2-3tsp of water for runny icing (or juice), then drizzle.
